My Meatless Monday posts have fallen by the wayside, but I haven’t stopped participating!
This week, I prepared a bean based meal using my slow cooker. It’s super easy, super-customizable and extremely inexpensive! You can also freeze it for later!
On a side note, you might want to have some Beano handy.
I wouldn’t really call it a recipe. I just grabbed what I had in my pantry.
Here is what I used:

2 cans of White Kidney beans

2 cans of Kidney beans

2 cans of Dark Red Kidney beans

1 can of Black beans
-
Frozen corn
-
Frozen Black-eyed Pea & Green bean mix

Canned tomatoes with diced chilies

6 or so Pepperoncinis (the pizza place gave me a bookoo since I wanted to try anchovies, but they stopped carrying them)

Then, out of nowhere my boyfriend grilled some bone-in chicken legs (I guess it’s not a leg with no bone) and threw it in there!

Seasoned with salt & pepper and nothing else

I cooked it on high for a few hours (3-4), then overnight on low.
You can stock up on canned beans in the fall/winter when chili is popular or go to Save-A-Lot or Aldi type stores, where it’s ALWAYS inexpensive! Again…BEANO!!
